How Do We Choose Your Coffee?
From bean to selection: how do we evaluate coffee?
Months before you open the bag, we get to know the producer, the region, the variety, and the processing method; we taste samples and compare different roasting profiles. This way, you can perceive the natural character of the coffee more clearly in your cup.
1. We examine the origin and lot information
When choosing your coffee, evaluate the farm, region, variety, and processing method together. This information provides the first clues to understanding the character you will encounter in the cup.
2. We taste the samples
During cupping, aroma, acidity, sweetness, body, balance, and finish are evaluated together. We look at the cup as a whole, not just at a single feature.
3. We compare roast trials
Different roasting approaches are compared through small trials. When determining the appropriate profile, we monitor how the coffee's natural character is expressed in the cup.
4. We create our selection for Turkey
Compare the tasting notes, roast information, and recommended brewing methods; choose the coffee that best suits your palate and preparation habits.
