We chose Ethiopia by DABOV because this coffee powerfully reflects the spirit and authenticity of coffee's homeland. In our tasting, we were impressed by the clear and layered profile created by bright fruity notes, velvety sweetness, and an elegant balance. This lot is a narrative of origin, tradition, and a unique terroir identity. We believe it deserves a place in your collection because this combination of quality and character is rare.
Heirloom is not a single coffee variety; it is a rich genetic heritage encompassing hundreds, or even thousands, of indigenous, wild, and cultivated Arabica varieties that grow naturally in Ethiopia. Over centuries, these plants have adapted to the terroir and climate and have been carefully selected by local farmers. The result is a diversity of taste, aroma, and history that is unparalleled in the coffee world.
Born and raised in Ethiopia's Sidamo region, Leykun Zegay Dagnachew is one of the new generation of specialty coffee producers. His farm, at an altitude of 2,300 meters, offers favorable conditions for the slow ripening of coffee cherries. Leykun meticulously manages every stage of processing, from the hand-picking of the best cherries to controlled drying, and focuses on sustainable farming practices.
